As the cold weather winds down, the cozy, warm winter foods can begin to feel a little heavy and dull. So, I like to add a delicious side salad for a bright note!
One of my favorite ways to throw together a quick salad is; take a large bowl of lettuce greens, add whatever fresh veggies you like, drizzle with olive oil, vinegar and some dry herbs and toss to combine. The pre-washed containers of lettuce greens are a wonderful time saver from the grocery stores’ produce section!
A yummy, savory combo: baby spinach, cucumbers, cherry tomatoes, olives, Parmesan cheese, and drizzle with olive oil, white wine vinegar, garlic salt and Italian herbs.
Alternatively, a sweeter combination: mesclun greens, thinly sliced apples, dried cranberries, & walnuts, drizzled with olive oil, honey and balsamic vinegar.
It’s amazing how many different combinations you can think up!
Look in your fridge or pantry for inspiration… Canned chickpeas, leftover oven-roasted veggies, cheeses & citrus fruits. Or cubed, cooked meats for added protein.
